2: Tunnel oven:
The baking tunnel oven include 3 parts : 1st baking tunnel oven, liquid egg brushing machine, 2nd baking tunnel oven.
The tunnel oven for baking moon cake is direct fired tunnel oven. The conveyor for this oven is slat band conveyor , which is suitable for baking products using baking tray.
Egg brushing machine
There are three methods to brush the liquid egg on the surface of moon cake after 1st baking :
1: Brush manually 2: Auto brushing in length and breadth 3: Auto rotary brushing .
Step cooling tower
1: The qty. of step cooling tower depends on the cooling time and the customer’s workshop layout.
2: The step cooling tower consist of one set of single pan ascent tower and multi pan descent tower. The cooling tower is equipped with the cooling fan.
3: Working principle: when the pan is lifted up to top layer by layer, it will be transferred into descent tower, then multi pan per layer goes down layer by layer, and the moon cake cool down when the pan reached to the bottom of tower.
Moon Cake De-panner
The reason is : the feature of moon cake is thin skin and heavy stuffing, and the skin is high sugar and high oil, it is easy to broke. So the proper way to take the moon cake from pan is manually. Especially for the moon cake size is big.
But it depends on the recipe, if the skin of moon cake is not so soft, we suggest to use the special designed tray and auto de-panner.
Pan return conveyor /Pan cleaning machine/ pan lifter
After depanned, the empty pan will be cleaned and be stacked and lifted by a pan buffer, go through the overhead conveyor , and transfer them into auto traying machine for next cycle.
