Product Description

The croissant is made of puff pastry dough, the mixture of flour, sugar, butter, yeast and water is kneaded, then divided into several pieces of dough, before letting it rest. The croissants are then shaped and baked at 180°C for about fifteen minutes.

Pans, trays can all be handled by the proofing room. Different tray types can be used as long as their outer dimensions are equal. The proofing room has several racks that consist of one or more levels, making the proofing time and capacity flexible without increasing the floor space.

The pans are fed into the proofer by conveyor and do not touch each other. Once a row is filled, it is lifted with an L-shape carrier. This process is repeated until the first dough has reached the top level. Then, the pans are moved out of the proofing room.

The proofing room is accommodated with a temperature and humidity control system and insulated housing.

1.1 The oven is constructed gas-tight baking tunnel divided into 2m/ section, each section with a gas-tight connection between the units.

1.2 The baking tunnels are insulated with high-quality insulation material to reduce heat loss to a minimum.

HEATING SYSTEM

The indirect heating system is controlled by a hot air circulation system. The heat is transferred and exhausted from the heat exchanger, and the high-temperature fan sucks the air from the baking chamber and sends it first through the heat exchanger and then to the plenums positioned over and under the baking conveyor. The ratio of top/bottom heat is infinitely adjustable by means of a damper.

The heating box is installed on the top of the tunnel oven. The heat source is gas, and the powerful fan makes heat exchange of air inside of tunnel oven and heat from the heating box continuously. The hot air flows out from a uniquely designed outlet to bake the product all around stably. The burning chamber is made of stainless steel δ3.0. The heat exchange chamber is made of stainless steel δ2.0 and a specially designed screwed pipe.

The air tunnel is bent by carbon steel δ2.0 and is punched and welded to guarantee the creation of heat evenly.

Using the motor of the fan with the brand ABB and the burner with the brand Weishaupt, the heating power be divided into ten stages and can be adjusted, which can help the burning system run stably and safely and save energy.

 

Needle Depanner

By means of a pick-and-place principle, a depanning head is positioned above pans; the (exchangeable) depanning head picks up the product and then transfers it to the cooling conveyor and releases it.
